Ingredients to make Peruvian rice with chicken:

 1 onion

 1 pepper

1½ tablespoons of yellow chilli pepper

1 dessert spoon of Panca or Ají colorado

 1½ teaspoons Garlic ground

 ½ cup of Oil

½ cup peas or split peas

 2 carrots

 1 cup of black beer

 8 pieces of Chicken

 1½ cups ground coriander

 4 cups of white rice

1 cube of concentrated chicken broth

 1 pinch of Cumin

1 pinch of Salt and Pepper

7 cups of water that is not cold

How to make Peruvian rice with chicken:

First of all, gather all the ingredients and prepare the vegetables. This means that you must chop the carrot and onion into very small squares, while the pepper must be cut into julienne strips and the coriander, or coriander, we will pass it through the blender.

Season all the chicken pieces by brushing well with salt and pepper. For this recipe for Arroz con Pollo, I recommend using thighs and thighs because they are juicier.

Now, heat a pan with the oil and fry the chicken pieces until they start to brown a little. Then remove to a plate with absorbent paper to remove excess oil and reserve.

Reserve the fried chicken thighs in a covered container to keep them warm while we go through the rest of the recipe.

Retrieve the pan where we have fried the chicken and cook the onion along with the coriander, ground garlic, yellow pepper and red pepper. Add some flavour to this stir-fry with salt, pepper and the chicken cube.

Continue cooking for a few minutes until the onion begins to brown, then add the cilantro and stir everything to prevent the vegetables from burning.

When a minute or so has passed, it's time to put the chicken pieces back in the pan and stir them with all the ingredients to let the flavours permeate. Also, add the beer and after another minute add 3 cups of water and wait for the chicken to finish cooking completely.

When you check that the chicken is cooked, remove it from the pan and put the pieces back in a container where they keep the heat. Then add the rest of the water along with the carrots, peas, and rice.

Remember that the liquid should always double the amount of rice, so in total, we have 7 cups of liquid for the 4 of rice that we will use for this Peruvian recipe.

Move the whole set from time to time so that the rice does not stick and when it breaks a boil, lower the flame to low heat and finish cooking our Peruvian rice for about 20 minutes.

When the rice has about 5 minutes to go, place the chicken pieces into the pot along with the bell pepper strips and replace the lid. When this time passes you will be ready to enjoy.

Serve a good plate of Peruvian rice with chicken and calculate about two small pieces or one large per person. You can accompany this delicious dish with some slices of banana or some potatoes a la huancaina. Enjoy your meal!
