Napoleon Pie Recipe

The recipe that we will present here is a very delicate and tasty sweet, considered cultural and gastronomic heritage of the city of Piraju, São Paulo.

This napoleon pie recipe, which has been passed down from generation to generation, was created in the mid-1950s and boils down to a sweet composed of several layers of very thin dough, interspersed with a delicious cream and finished with chocolate ganache. It is served chilled and very reminiscent of the sweet called a thousand leaves! However, the napoleon pie dough is not puffed, it is made by hand and, when placed in the jam, it softens when it comes into contact with the cream.

Ingredients for making napoleon pie:

Napoleon Pie Dough:

 250 grams of wheat flour (approximately)

 1 egg yolk

 2 tablespoons of sugar

 ⅓ cup of oil

 ½ tablespoon of baking powder

 1 pinch of salt

 125 milliliters of warm water

Filling (cream):

 1 liter of whole milk

 4 tablespoons of cornstarch (cornstarch)

 2 egg yolks

 1 can of condensed milk

 ½ teaspoon of vanilla essence

Topping (chocolate ganache):

 300 grams of semisweet or milk chocolate

 1 box of sour cream

 chocolate sprinkles to decorate

How to Make Napoleon Pie:

Separate the ingredients from the dough to make the recipe easier.

Tip: If you want to make a bigger pie, we suggest you fold the recipe and use a large baking dish as a mold to accommodate the pie.

In a bowl, place all the ingredients for the dough: the sifted wheat flour, the yolk, the oil, the warm water, the salt, the sugar and the baking powder.

Mix all these ingredients until you get a smooth, smooth and elastic dough.

Tip: If necessary, add a little more wheat flour.

Form the dough into a ball and let it rest in the oven for 30 minutes.

Tip: I recommend letting the dough rest in the oven turned off because it is a pleasant place for it to rest.

Separate the cream ingredients from the napoleon pie while the dough rests.

In a medium saucepan, add the milk with the diluted cornstarch, the condensed milk, the sifted yolks and the vanilla essence, mixing well.

Let the cream simmer over a low heat until it starts to thicken, with a porridge texture, as shown in the photo below. Reserve the cream, letting it cool to continue the recipe.

After the dough's resting time, divide it into 8 or 10 equal parts so that you can bake layers of dough that will make up the pie. Also set aside a baking sheet that will be used as a mold and shape for the dessert.

Tip: For this recipe, we use a medium oval baking dish, 29 x 20 cm.

Roll out each piece of dough with the help of a rolling pin. It should be very thin so, to make it easier, open it between two bags, as in the photo.

Place a portion of the dough on top of the pan, greased with oil, and let it bake in a preheated oven at 180 degrees for 10 to 15 minutes or until lightly browned. Repeat this process with all the dough portions and set them aside.

Cover the mold used as a mold with plastic film or aluminum foil and start assembling the pie: accommodate a sheet of the baked dough, cover with the cold cream, spreading well, and insert the sheets and cream until the ingredients are finished.

With the pie assembled, cover the surface with plastic film or aluminum foil and refrigerate for at least 12 hours to set the sweet.

After this time of rest, that is, the next day, separate the ingredients from the ganache to make the pie topping.

Melt the chocolate in a bain-marie or microwave and mix in the cream, until the ganache is smooth and homogeneous. Allow it to cool a bit to unmold the pie and cover.

Unmold the pie on a platter and sprinkle with the chocolate ganache.

Cover the entire pie with the chocolate ganache and garnish with chocolate sprinkles.

Tip: If you want, also decorate with fruits, such as strawberries or cherries, to make this layered pie even prettier.
